- Extra-Virgin and virgin are the purest forms(often called cold-pressed because they are not heated during processing). They have the most flavour and the highest concentrations of antioxidants, including vitaminE, which helps preve nt them from breaking down at high heat. Ideal for dressing salads or drizzling over steamed vegetables before serving.
- Refined olive oil has slightly lower levels of antioxidants but is less expenseive than extra-virgin, which makes it ideal for shallow-or work-frying grilling and roasting.
- Extra-light olive oil has little flavour and good for frying both savoury and sweet foods.
